- If you are not from Medan City, surely the name of this dish sounds foreign. But for the people of Medan itself is no stranger to them. Sayur Tuk Tuk Teri (Vegetable Tuk Tuk Anchovies) is an authentic Medan Cuisine. And this cuisine as Indonesian Cuisine which is already well known in this country.

Previously I have shared 2 names of dishes from Medan, including Ayam Bakar (Grilled Chicken) and Sayur Tauco (Tauco Vegetables). Let's see how to make this Medan-style Sayur Tuk Tuk Teri, and what materials are needed to make it.

Ingredients, and ground spices:
  • 250 grams of cassava leaves.
  • 100 grams of leunca(*).
  • 50 grams of Medan anchovies, fried.
  • 2 knuckles of galangal, bruised.
  • 2 bay leaves.
  • 2 tablespoons of cooking oil.
  • 750 ml coconut milk from 1 coconut.
  • Salt, sugar to taste.
How to Make Sayur Tuk Tuk Teri:
  1. Boil cassava leaves in a pan until cooked, remove, drain, cut into pieces.
  2. Heat in a pan 2 tablespoons of oil, saute ground spices, bay leaf, galangal until fragrant.
  3. Add cassava leaves, pour coconut milk, add salt, sugar to the pan. Stir until smooth. Add anchovies, leunca. Cook until done. Lift and serve.

 (Solanum nigrum) is a member of the eggplant tribe (Solanaceae) whose fruit is known as a vegetable and is also a medicinal ingredient.
