I will still discuss Medan Cuisine, in my previous post I shared about Ayam Bakar (Grilled Chicken) cuisine also from Medan. Now it's my turn to share the Sayur Tauco (Vegetable Tauco) dish with Indo Style friends. Curious? Let's see how to make Medan-style  Sayur Tauco and what materials are needed to make it.

Ingredients:

  • 125 grams of brisket, cut into small cubes.
  • 100 grams of prawns, peeled.
  • 50 grams of long beans, cut into pieces.
  • 50 grams of tekokak* (Solanum torvum).
  • 8 cloves of red onion, thinly sliced.
  • 3 cloves of garlic, thinly sliced.
  • 2 red chilies, crushed.
  • 2 cm galangal, bruised.
  • 1 lemongrass stalk, bruised.
  • 2 segments ginger, bruised.
  • 2 bay leaves.
  • 1 kecombrang flower*, cut into 4 lengthwise.
  • 2 green chilies, thinly sliced ​​oblique.
  • 2 red chilies, thinly sliced ​​oblique.
  • 1 tomato, thinly sliced.
  • 2 star fruit vegetables, cut lengthwise.
  • 2 tbsp tauco* (is a paste made from preserved yellow soybeans).
  • 1 plantain, split 2.
  • 1/2 tsp salt.
  • 1 tsp sugar.

How to Make Sayur Tauco:

  1. Saute shallots, garlic, fine red chilies, galangal, lemongrass, bay leaves, ginger, kecombrang, and plantain until wilted in the pan.
  2. Add to the pan the sliced ​​green and red chilies, tomatoes and star fruit vegetables. Stir until wilted.
  3. Put the tacos into the pan, stir until cooked. Add meat and shrimp. Stir until it changes color.
  4. Put the long beans into the pan, tekokak, salt and sugar. Stir. Pour 300 ml of water, cook until the spices are absorbed.
